Turkey is an inevitable part of the menu during Thanksgiving. And even if you're a guest, not the cook at the annual feast, you'll probably be gifted with a part of the bird to take home.

So a sage piece of advice for twosomes: when leftover turkey comes your way, make biscuits. Not just any biscuits, but sage-scented, old-fashioned baking powder biscuits.

Although sage isn't a traditional biscuit ingredient, it's appropriate when you want a bread to pair with turkey. Imagine the robust flavor of turkey stuffing; you'll get a hint of that in the biscuit recipe that follows.

In addition, once you start baking, you'll discover that the biscuit and turkey combination is open to a variety of preparations.

For example, split open a biscuit, thinly spread with mayonnaise and top with thinly sliced turkey breast meat. Cover with a small handful of arugula and serve.

If you prefer, use mustard instead of mayonnaise and switch from arugula to a thin onion slice.

Hot turkey and biscuits and turkey also make a delightful dish. Open a just-baked biscuit and top with reheated sliced turkey and gravy.

If you have turkey salad on the menu, simply serve the biscuits on the side.

As you gather inspiration you may start calling relatives for more turkey leftovers.

Sage Biscuits

Makes 4 biscuits.

Preparation time: 10 minutes

Cooking time: 16 minutes

1 cup flour plus extra for dusting work surface

1/4 teaspoon salt

2 teaspoons baking powder

2 teaspoons sugar

1 teaspoon minced fresh sage

1/4 cup (1/2 stick) unsalted butter, cut in small pieces

1/3 cup milk or more if necessary

Combine 1 cup flour, the salt, baking powder and sugar in a bowl. Stir. Add sage and stir again. Cut in butter until mixture is in small chunks. Stir in milk until slightly sticky dough comes together. Knead 3 or 4 times.

Turn dough out onto lightly floured surface. Pat to a disk 2/3 inch high. Cut with 2 1/2-inch round biscuit cutters to make 4 biscuits. Place on parchment-lined baking sheet. Bake in preheated 400 F oven for 16 minutes or until biscuits are golden brown. Remove from oven. Cool on wire rack for 10 minutes before splitting open.

Each biscuit has: 235.5 calories; 12.5 grams total fat; 4 grams protein; 27 grams carbohydrates; 32.5 milligrams cholesterol; 146.5 milligrams sodium and 1 gram dietary fiber.
