No-Bake Almond Bars

Cereal lovers, rejoice: Our no-bake almond bars will be ready in 30 minutes to satisfy that sweet tooth!

They'll taste like you put in quite a bit more TLC when you tote them along during busy weekdays.

Makes 10 bars

No-Bake Almond Bars Recipe Ingredients

1 cup rolled oats, instant or regular

2 1/2 cups Kellogg's Smart Start cereal

1 cup Kellogg's Raisin Bran cereal

1/4 cup salted pumpkin seeds

1/2 cup unsalted whole roasted almonds

1/4 cup unsweetened shredded or flaked coconut, toasted optional

1/2 cup brown rice syrup

1/3 cup chunky almond butter

1 teaspoon vanilla extract

1/4 teaspoon almond extract

No-Bake Almond Bars Recipe Directions

Line an 11-by-7-inch glass baking dish with parchment or waxed paper.

In a large mixing bowl, combine all the dry ingredients and gently toss to mix.

In a separate microwaveable bowl, combine the syrup, almond butter and extracts.

Microwave on high power for 20 to 30 seconds and stir well.

Immediately add to the dry ingredients and toss until very well combined and syrup mixture has been evenly distributed.

Firmly press the mixture into the prepared baking dish so that it is spread out evenly to all sides.

Refrigerate for at least 30 minutes or longer.

Cut into bars and store in an airtight container for up to two weeks in the refrigerator or wrap them individually in plastic wrap.


The longer they chill in the refrigerator, the more firm the cereal bars become. Everyone I made taste-test these loved them, especially my friends from my running group!
