I don't enjoy multi-tasking. Especially over the busy holiday season, when I seem to have a zillion places to be at the same time, plus finding time to bake, shop and travel. So to save time when I'm making cookies for the holidays, I make a no-bake cookie. I can whip them up and have finished cookies in 30 minutes from start to finish. Better yet, no-bake cookies are perfect to make with kids.
These Angel Delights, a more sophisticated, wholesome take on Rice Krispies treats, were the hands-down grand prize winner of EatingWell's annual holiday cookie contest a few years ago. It was a tough job to pick a winner that year, but in the end, everyone agreed that Frances Van Vynckt from Hammond, Ind., deserved the blue ribbon for her sweet, melt-in-your-mouth cookies, named after her six children, whom she liked to refer to as "little angels." We all loved the sweet date and coconut flavors combined with a slightly chewy, crispy texture.
These Angel Delights No-Bake Christmas cookies promise to be a standout on any holiday cookie tray year after year.
Angel Delights No-Bake Christmas Cookies Recipe
Prep Time: 30 minutes
Yield: 48 Cookies
Angel Delights No-Bake Christmas Cookies Recipe Ingredients
1/4 cup unsalted butter
1 cup sugar
1 1/2 cups chopped pitted dates (8 ounces)
1/8 teaspoon salt
1 teaspoon vanilla extract
2 cups toasted rice cereal, such as Rice Krispies
1 cup shredded coconut
Angel Delights No-Bake Christmas Cookies Recipe Steps
Combine butter, sugar and dates in a large saucepan. Cook, stirring constantly, until the butter is melted, the sugar is no longer white and the dates are mostly melted, 8 to 15 minutes. The mixture should be a shiny, brown sticky mass. Remove from the heat.
Add salt, vanilla, cereal and coconut; stir well to combine.
When cool enough to handle, squeeze and roll the mixture into 1-inch balls. Place on a wax paper-lined baking sheet. Refrigerate until chilled.
