My grandmother used to make the most amazing smooth-as-silk mashed potatoes that were never gummy, lumpy or dry. What was her secret? Tons of butter and whole milk.
I would love to follow in her footsteps and make her recipe as is, but I would have to spend the next month on the treadmill working those potatoes off.
So I've decided to forgo my grandmother's version of classic, fluffy mashed potatoes and look into healthier ways to get the same result.
We've tested and developed many mashed potato recipes in the
Why Mashed Potatoes Are the Ultimate Comfort Food
Mashed potatoes are a classic side dish that pairs perfectly with any meal, from holiday feasts to weeknight dinners. Creamy, buttery, and irresistibly smooth, they bring warmth and comfort to the table. However, achieving the perfect fluffy texture can be tricky. With these four expert tips, you'll master the art of making the most delicious mashed potatoes every time.
1. Choose the Right Potatoes
The key to fluffy mashed potatoes starts with selecting the right potatoes. Starchy varieties like Russet potatoes and Yukon Gold potatoes yield the best texture. Avoid waxy potatoes like red or new potatoes, as they can become gummy when mashed.
2. Cook Potatoes Properly
Overcooked or undercooked potatoes can ruin the texture of your mashed potatoes. Follow these steps for perfect cooking:
- Peel and cut potatoes into evenly sized chunks.
- Boil in salted water until fork-tender (about 15-20 minutes).
- Drain and let them steam for a few minutes to remove excess moisture.
3. Mash the Right Way
Using the wrong mashing technique can make mashed potatoes gluey instead of fluffy. For the best results:
- Use a potato ricer or hand masher for a lump-free, airy texture.
- Avoid over-mixing with an electric mixer, as it can break down the starch and make the potatoes sticky.
4. Add Butter & Cream the Right Way
Adding cold butter or cream can make mashed potatoes dense. Instead:
- Use warm melted butter and warm heavy cream to ensure they blend seamlessly.
- Mix gently until just combined to maintain a light, fluffy texture.
