Watermelon and Tomato Salad
If you like mixing sweet and salty, you’ll love this summery watermelon and tomato salad.
Seasonal watermelon cubes are a surprisingly tasty match to fresh tomatoes, red onions and basil. Feta cheese adds a salty kick; toss with a lime-and-olive-oil vinaigrette for a zesty finish.
Brimming with antioxidants, vitamins and minerals, this guilt-free salad helps maintain a good blood pressure, strong bones and a healthy heart. Short on time? Substitute precut watermelon cubes from the supermarket.
Makes about 7 servings (about 1 1/2 cups each)
Ingredients
7 cups seeded 1-inch watermelon cubes
2 cups halved grape tomatoes
1 cup halved, thinly sliced red onion
1 cup (about 5 ounces) crumbled feta cheese
1/2 cup chopped fresh basil
4 tablespoons fresh lime juice
3 tablespoons extra-virgin olive oil
1/2 teaspoon freshly ground salt
1/4 teaspoon freshly ground black pepper
Directions
1. In a large bowl, combine watermelon cubes, tomatoes, red onion and feta cheese.
2. In a small bowl, whisk together lime juice, olive oil, salt and pepper. Pour over watermelon mixture.
3. Toss gently to blend.
4. Serve immediately, as salad tends to get soggy if left sitting.
5. Refrigerate any leftovers.
