Plum and Ginger Muffins Recipe

The batter for this plum and ginger muffins recipe, which is slightly sweeter than usual, accommodates other sweet or slightly tart fruits.

This recipe is also excellent with ripe, full-flavored peaches, nectarines, blueberries or raspberries.

Match the seasonings to the fruit. Plums and crystallized ginger are excellent together. Peaches, nectarines or blueberries are tasty when spiced with either nutmeg or cinnamon.

Raspberries, however, prefer to not share the limelight, so skip additional flavorings. If you vary the following plum and ginger muffins recipe by eliminating the small bits of crystallized ginger, make up for the lost volume by adding two tablespoons more raspberries to the batter.

Serve these plum and ginger muffins muffins with morning coffee or afternoon tea and you won't be asked what happened to that plum sitting on the counter.

Plum and Ginger Muffins Recipe

    Cook time: 30 minutes

    Yield: Makes 6 plum and ginger muffins

Plum and Ginger Muffins Ingredients

    1 cup flour

    1/4 cup quick-cooking oats

    3 tablespoons sugar

    11/2 teaspoons baking powder

    1/4 teaspoon salt

    1/2 cup milk

    1 egg, beaten

    3 tablespoons butter, melted

    1 large black plum, peeled, pitted and finely chopped (1/2 cup chopped)

    2 tablespoons finely chopped crystallized ginger

    1/4 cup sliced almonds

Plum and Ginger Muffins Recipe Instructions

    Combine flour, oats, sugar, baking powder and salt in a bowl.

    Beat together milk, egg and melted butter in second bowl. Pour milk mixture into flour, stirring to dampen ingredients.

    Stir in plum, ginger and almonds.

    Grease 6 cups in a 12-cup muffin tin. Spoon in batter.

    Bake in preheated 375-degree oven for 30 minutes or until golden.

    Cool muffins in tin for 5 minutes. Turn out onto wire rack to cool completely.

Each plum and Ginger Muffin has: 230 calories; 9 grams total fat; 5 grams protein; 32 grams carbohydrates; 153 milligrams cholesterol; 120 milligrams sodium and 1.3 grams dietary fiber.
