This easy Oatmeal Orange mini-muffin recipe also works great when making regular-size muffins.
Just divide batter between 12 standard-size muffin tins (3 mini muffins = 1 regular size). Try toasting the walnuts to bring out more flavor. You’ll be able to use a smaller amount while still getting great nutty flavor. Did you know walnuts are the only nuts containing a significant source of heart-healthy omega-3 fatty acids.
Oatmeal Orange Mini Muffins Recipe

Cook time: 12 minutes
Yield: Makes 36 mini muffins (36 servings, 1 muffin per serving)
Oatmeal Orange Mini Muffins Ingredients
Muffins:
¾ cup whole-wheat flour
¾ cup all-purpose flour
1 cup quick-cooking oats, uncooked
⅔ cup granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons finely grated orange zest
½ cup finely chopped toasted walnuts*
¾ cup orange juice
⅓ cup 1% milk
1 large egg
¼ cup canola oil
Topping:
3 tablespoons quick-cooking oats, uncooked
3 tablespoons sugar
1-2 teaspoons finely grated orange zest
Directions
Oatmeal Orange Mini Muffins Recipe Instructions
Preheat oven to 400 F.
Prepare mini-muffin pan with paper baking cups or vegetable cooking spray.
Mix topping ingredients in a small bowl and set aside.
Combine flours, oats, sugar, baking powder, baking soda, salt and orange zest in large bowl. Add walnuts and mix well.
In a separate bowl, whisk together orange juice, milk, egg and oil until well-blended. Add to dry mixture and stir only until all ingredients are moistened; do not overmix.
Divide batter evenly between prepared muffin cups and sprinkle with a small amount of topping.
Bake 10 to 12 minutes or until wooden pick inserted in center comes out clean.
Cool in pan for two minutes, and remove to wire rack.
*Toasted walnuts: Place chopped walnuts in a single layer on a cookie sheet or pan and toast in oven (350 F) for 8-12 minutes or until lightly browned. Stir several times while toasting.
