Maple-Walnut Raisin Bread

Maple-Walnut Raisin Bread Recipe Ingredients

    1 1/3 cups buttermilk

    2 cups Kellogg's Raisin Bran

    2 large eggs

    1/2 cup vegetable oil

    1/4 cup pure maple syrup

    2 cups all-purpose flour

    1/2 cup packed light brown sugar

    1 teaspoon baking powder

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/2 cup chopped toasted walnuts

    1/2 cup golden or dark raisins

Maple-Walnut Raisin Bread Recipe Instructions

    Preheat oven to 350 F.

    Spray a 9-by-5-inch loaf pan with nonstick cooking spray.

    In a medium bowl, combine buttermilk and cereal and let stand to allow cereal to absorb liquid.

    In a large bowl, combine flour, brown sugar, baking powder, baking soda and salt.

    Whisk eggs, oil, and maple syrup into cereal mixture and then stir wet ingredients into dry ingredients to moisten.

    Stir in walnuts and raisins.

    Scrape batter into prepared pan and smooth with a spatula.

    Bake until wooden skewer inserted into center comes out clean, about one hour.

    Let cool in pan for 10 minutes

    Invert onto wire rack and re-invert to cool completely before slicing and serving.
