Heirloom Tomato, Fresh Fig and Burrata Salad with Mint Vinaigrette Recipe

This heirloom tomato, fig and burrata salad with mint vinaigrette recipe is simple-to-make yet elegant and delicious.

Has this ever happened to you? You're strolling through the farmers' market when you spy a table heavy with heirloom tomatoes.

There's a youthful, striped Green Zebra sitting next to a grandfatherly, bulbous Cherokee tomato the color of red wine. You scoop up a couple of each. Your mind is swimming with juicy possibilities -- tomato and mozzarella salad, tomato and goat cheese tart. Afraid you won't have enough, you select a few sunny Yellow Brandywines.

As you're walking toward the farmer to pay for your tomatoes, you spot a perfectly plump celery-green fig. You've never seen a green fig before, so you buy a pint. Then the farmer points out an array of fragrant, colorful herbs including lemon verbena and purple basil. You say you'll take a bunch of each. No one passes up purple basil.

You hand your heavy sacks to the farmer, who weighs them and says, "That'll be $28, please."

You blanch. You only have $20 left in your wallet. What do you do?

Here's my advice. At this point, excuse yourself. Walk to the nearest ATM, or hit your kid up for the money. Whatever you do, buy the vegetables.

Then go home and make this simple yet elegant heirloom tomato, fig and burrata salad with mint vinaigrette. If you can't find heirloom tomatoes, then use the sweetest, freshest tomatoes you can find. Fresh figs are in season and are available at some farmers' markets and many major supermarkets. Burrata cheese, a fresh mozzarella cheese with a creamy center, is available at Italian specialty markets and most major supermarkets.
