This crowd-pleasing grilled marinated flank steak recipe calls for grilling the steak, similar to searing, but this procedure leaves grill marks and imparts a slightly smoky flavor if you use your barbecue. If the weather dictates indoor cooking, use a grill pan instead.

Flank steaks need to be tenderized by pounding, slow cooking or marinating. Here, red wine, citrus and curry make a tasty marinade. It's best to grill flank steak until just medium rare; over cooking will toughen the meat. Make sure to cut the flank steak on the diagonal against the grain so that the slices are very tender.

Serve this grilled marinated flank steak recipe with oven-baked French fries and sauteed green beans. Try a Cotes du Rhone or Zinfandel to accompany this.

Plan on making this grilled marinated flank steak recipe toward the end of the week so you can have it on hand for weekend sandwiches. When making sandwiches, spread split French rolls with spicy garlic mayonnaise. Layer the rolls with slices of flank steak, very ripe sliced tomatoes, and arugula leaves. Grilled Marinated Flank Steak

    Prep Time: 20 minutes (plus marinate for 2 to 4 hours)

    Cook time: 14 minutes

    Yield: Serves 4 to 6

Grilled Marinated Flank Steak Ingredients

    For the marinade

      3/4 cup red wine

      2 medium garlic cloves, minced

      2 tablespoons olive oil

      1 tablespoon fresh lemon juice

      2 tablespoons fresh orange juice

      1 teaspoon orange zest

      1 teaspoon lemon zest

      1 teaspoon soy sauce

      1/2 teaspoon curry powder

      Salt and freshly ground black pepper

    1 (2-pound) flank steak

Grilled Marinated Flank Steak Recipe Instructions

    1. Combine all the marinade ingredients in a medium mixing bowl and whisk until well combined. Taste for seasoning.

    2. Flatten out the flank steak in a large, shallow nonaluminum dish. Pour the marinade over and marinate 2 to 4 hours in the refrigerator, covered.

    3. Prepare the barbecue or grill pan for medium-high heat grilling. Remove the steak from the marinade and grill 3 inches from the flame, 5 to 7 minutes per side for medium rare.

    4. Place on a carving platter and let rest for 5 minutes. Thinly slice the steak on the diagonal and against the grain. Serve immediately.
