When it comes to no-fuss breakfast treats, frozen puff pastry is your secret weapon, your ace in the hole, and your new best friend. Found in the freezer section, these pre-made sheets of buttery dough are arguably just as good as puff pastry made from scratch and definitely a lot easier.

Here's what you do: Remove a sheet of puff pastry from the package and let it thaw on your counter for about 15 minutes so it's pliable. Cut, shape and fill your rolls with anything sweet or savory that suits your fancy. (Chocolate is always a good choice.) Slide them into the oven, and 20 minutes later, you have warm and flaky pastries worthy of any bakery display case.

Chocolate Croissants Recipe

    Prep Time: 30 minutes

    Cook time: 20 minutes

    Yield: Makes 8 Chocolate Croissants

    2 sheets frozen puff pastry

    1 4-ounce bar of dark chocolate

    1 egg yolk

    Sprinkle your counter with a little flour and set the puff pastry out to thaw at least 15 minutes. Pre-heat your oven to 400 F and line a baking sheet with parchment paper. Cut the chocolate into eight smaller bars. In a small bowl, mix the egg yolk with a tablespoon of warm water to make an egg wash.

    When the dough is pliable, unfold both sheets and cut them in half. Then cut each half diagonally to form triangles. Place a rectangle of chocolate at the wide end of one of the triangles and gently roll it up. Use a pastry brush to dab a little egg wash under the tip to hold it down.

    Transfer the roll to the baking sheet and repeat with the other triangles. Brush all the pastries with the egg wash just before baking.

    Bake for 18-20 minutes, until the surfaces are golden and the tips are toasted brown. Allow to cool on a rack for 10 minutes before eating.

    Pastries are best eaten right away. Leftovers can be stored for up to a week and are best reheated in a toaster oven.

    1-2 tablespoons mustard

    1/4 lb thick-cut deli ham, diced

    4 ounces gouda or cheddar cheese, shredded

    1 egg yolk

    Sprinkle your counter with a little flour and set the puff pastry out to thaw at least 15 minutes. Pre-heat your oven to 400 F and line a baking sheet with parchment paper. In a small bowl, mix the egg yolk with a tablespoon of warm water to make an egg wash.

    Yield: Makes 12 Jam & Cream Cheese Pinwheels

    2 sheets frozen puff pastry

    1/4 cup white sugar

    1 tablespoon cinnamon

    1/2 cup butter, melted

    1/4 cup cream cheese

    1/4 cup jam, like raspberry, blackberry, or strawberry

    Sprinkle your counter with a little flour and set the puff pastry out to thaw at least 15 minutes. Pre-heat your oven to 400 F and line a baking sheet with parchment paper. Mix together the sugar and cinnamon in a small bowl.

    When the dough is pliable, unfold both sheets. Brush them with butter and sprinkle generously with the cinnamon-sugar mix. Cut each sheet into 6 long strips.

    Working one strip at a time, twist so the cinnamon-sugar spirals to the outside and then coil the pastry into pinwheels. Dab a little butter on the loose end and tuck this under the bottom. Nestle a spoonful of cream cheese and a spoonful of jam into the center of each pastry.

    Transfer the pinwheels to the baking sheet. Bake for 18-20 minutes, until the surfaces are golden and the tips are toasted brown. Allow to cool on a rack for 10 minutes before eating.
